“When setting this up, It asked about PDF software to search for it (or something like that). I didn't have time to do that. Now I need to scan a PDF. Some say it gives you two icons on your home screen but that was not the case. How do I get it?”

When downloading the software to set up the scanner it added two applications. Epson FastFoto and Epson ScanSmart. The ScanSmart application is what you would use to scan a document.
