“I get that each "plug unit" can be controlled separately (there are 2 in a pack), but on just one single unit, can each plug socket be run independently from the other. (ie. One plug socket used on an automated daily timer while the 2nd socket is ON 24/7)”

Yes indeed, the sockets can be run independently. In fact the app requires that you uniquely name each socket.
