There is a global semiconductor shortage (used to make graphic cards, cars, basically everything) so supply is low, however when new supply does make it in, the stock gets bought pretty much before anyone else can get it. Literally as soon as the add to cart button goes live, it will sell out almost immediately after. (seconds not minutes).
