Sure can but you will have to slice the pumpkin into slices.

I think it should. The mouth of the shredding bowl is small, so you have to make sure the pumpkin is cut up into small enough chunk to fit into the feeding bowl and keep pushing it down as the mixer/shredder is turned on. Be careful not to push it too close to the rolling blades.
