“1. Can maps for Europe and Asia be added? If so, how? 2. Can it have 3 profiles (1 for gravel, 1 for MTB, 1 for road bike)? Would I be able to just get a mount for another bike and put it on there and ride, or would it need to be calibrated ea time?)”

There are multiple profiles available. Compatible maps can be downloaded to the device. Only pedals would need to be calibrated if you are using them. Please go to support.garmin.com where you'll find many helpful FAQ's and video's on the functions of the device.
