“I have to replace my current black GE Profile which I would describe as having a "high gloss" finish. These new models appear to have a "matte" finish. Do I just have to live with the fact that a new GE microwave will not match my other appliances?”

GE Model JVM3160DFBB (black) has a glossy finish and will match other GE and GE Profile appliances in black. Our new appliances in Black Slate have a matte finish.
