“The dimensions of this fridge fit in our space, but the "cut-out height" listed is larger than our space. The height to door hinge, 69.5", will just fit. Is that other inch necessary or just "nice to have leeway"?”

No, the extra inch is not necessary but is nice to have for ventilation.

Height to Top of Case is 69" and Overall Height is 69 1/2" (includes hinge).
