Hi Lisa - GE® 30" Free-Standing Gas Convection Range JGB700SEJSS has Certified Sabbath Mode. Also, GE® 30" Free-Standing Gas Range JGB660SEJSS has Certified Sabbath Mode. The ranges can be installed between cabinets (Below Cooktop: 0" clearance to cabinets and at the range back. Above cooktop: 6" min. clearance to left wall; 3" min. clearance to right wall). You need a space of 30" between cabinets, the range itself is about 1/8" narrower than that so it's a close fit. Being so close to cabinets isn't a problem, it is designed for that. You need to make sure that you have enough space above the stove. The specs for that are online.
