Hello - we appreciate you reaching out with this great question! We know a variety of cooking options can be useful when using your oven, and we’re glad to advise this model does feature Bake, Broil, Warm, etc. modes in addition to Convection Bake and Convection Roast. Therefore, you don't have to use the convection feature if you'd rather not; you can simply select which option would be best from the menu when starting. If it might help, we have a description of the various Cooking Modes and what they’re best used for starting on page 16 of the Use and Care manual; that can be viewed on our GE website by looking up the model number, going to the product page, and selecting the Owner Support option where there’s a link to the manual.
