“We installed this oven during a kitchen remodel, when the delivery folks dropped it off they mentioned an initial heating. They wrote it on the box, well now the box is gone and I can’t find anything in the manual. What temp and for how long?”

Just heat it up to 350-400 degrees for 20 minutes or so....you'll be fine!

It is caused by the heating of new parts, insulating materials, or the tape used in shipping, and should dissipate after the first few uses.
