“Can I remove the center griddle and put regular matching burner grates in the middle?”

Yes, it came with the griddle but I bought burner grate so I can use either one.

We’re glad to advise your model does have an option for a center grate, which would be listed as JXGRATE1. It would also be known as part # WB31X27150.
