Hi stovecurious - The range is equipped with a non-stick aluminum griddle. The coating is in the same family as Teflon. It is also compatible with optional Cast Iron Gas Range Reversible Grill/Griddle WB31X24998 (sold separately). Thanks for considering GE. Keep in touch! SUE@GEA
