• You can still talk through the camera but the live viewing will go away. When you get an alert all you see is a picture instead of a short video of what set the camera off.

• Yes. I have not yet subscribed and it performs those functions. There is a small "reminder" each time you open the app about Nest aware subscription but it's transient and not too invasive.
