You do not need a chime butbir helps. You do need the low voltage hook up to your old doorbell. If that does not exist then you should buy a battery powered version. There is a Nest app that you can link the camera to tour phone and bypass the Google Home unit. However, the Google home unit makes it easier to announce when someone is at the door and possible speak to them.

If you wish to view the video you will have to use a cellphone, computer with internet, or something like a Google display or Amazon Show. You can use it with an electric or mechanical chime. You can wire it without a chime, but to get an actual notification of someone at the door other than alerts on your cellphone you will need a chime.
