“The product description says the stands are adjustable when it comes to width. There is a minimum and maximum width listed. However, the YouTube videos I have seen for this TV appear to show the stand legs are not. Are the stand legs really adjustable?”

This model has two feet placement positions for the stand, which allows you to choose if you want a wider or narrower placement. Position A has a TV stand width of 78 × 19.2 inches, while position B is 32.6 × 19.2 inches.
