“Since the water canister is a top fill, is it just open? From the pics it looks like it’s open. So anything in the air could fall into the water chamber? Dust, hair, bugs, etc?”

Thank you for your inquiry. Yes, the top is open. There is a cover over the tank to help prevent things from falling into it, and the water is wicked up by a filter before it is added to the air.
