“I have a Macbook Air M1 with the latest version of Monterey (12.1). Will this print all type of documents? The reason I ask is that I bought a black and white Brother laser and it only would print PDFs and pictures.”

Yes, it is compatible. You'll need to download the free HP Smart app to control the printer.
