• I honestly don't think it would hold the heat for canning.

• I don’t can but I’m sure you can do anything you could do with an ordinary range cooktop. Diameter is probably 9 inches but be sure you buy a deep one. I experimented boiling shrimp in just a quart-sized pot and it was enough for two.
