“The installation guidelines say a 34" minimum cutout opening for this dishwasher, and the dishwasher is listed as 33.8" tall. Is there any wiggle room with the 34" height or is that a hard 34" needed? My cutout is 33 7/8" and it's a granite countertop.”

No, theres actually a small bump at the top so you'll need more room then is stated.
