“I've read that in order to play HDR a lot of TVs needs a setting changed, i.e. turn on Deep Color. Is this the case here? I didn't see anything in the display settings. Also once HDR is enabled what happens when you watch non-HDR material?”

Go into menu look yhru picture setting options. It may be under advanced settings. Play with it,it will guide you thru available options. I usually set to auto.
