“Why does my alarm clock go off at the time set on alarm 1 even when the alarm indicator on the clock face is not lit up? Or in other words do I have to unplug my alarm to be able to sleep in when I don't need to be up early”

This is further proof that this unit's programming is not acceptable in this day and age. There is much faulty programming in this unit. Your problem highlights that beautifully.
