“Apparently my adapter will not work unless I select the "screen recording" option in displays, I was told by customer support that "it's nothing", but still creeps me out to get a pop up that my screen is being recorded. What's up with that?”

Screen recording just means, it essentially allows video in or out of the computer, video conferencing such as zoom or google meet also requires this to be enabled otherwise they will not work. Screen recording is not something we added to the MacOS.
