“Will both monitors display 4K resolution with both plugged in? I've seen some manual material that suggest it will display 4K if only 1 monitor plugged. If a second monitor is plugged in, the second monitor will display 2K resolution.”

• Unfortunately, with this device you will only be able to get one 4K display, and that is if you only have one display connected to this device (specifically the 4K HDMI port.)
