“I see these are 2 ohm speakers. Will a 4 ohm 5 channel amp be ok for 4 of these and a subwoofer? Will quality of sound suffer or will I run the risk of burning up the amp with the 2 ohm/4ohm speaker/amp mismatch?”

Most manufacturers will have a switch to change the configuration of the amplifier output no harm to speaker or amplifier if the the amplifier was 2 ohms and speakers were 4 ohms the gain would have to be adjust to compensate for over-driving the output stage. No problem with your current setup and speaker output will be minimal you probably won't notice any change in sound quality.
