Yes, one of the functions is to dehydrate. I have used that but it is capable. Do not know the answer for question about lead.

I had another popular air fryer and this outshines it. This is larger looks great and does a better job. I use this almost everyday at least once a day and it works great. I would buy this product again. I better read the directions again I must of missed the lead notification , with the cooking tools is there still some with lead out there, haven’t come across with any. If you are thinking about buying an all in one , this is one to buy. No other recommendations for a kitchen product that does so many things. Dee
