I believe you must select the "hot chocolate/other" option on the touch screen prior to pressing the brew button.

When we use the ice tea pods it instructed us to brew over ice so the drink would be cold. The instructions should be on the back of the box

I don't know about the expiration part, but to make iced tea, it should tell you to brew the iced tea pod over ice.

Brew cup of tea. when done pour it over a glass fiied with ice cubes. 
That works for me.
