“Is windows S mode something I can replace with like Norton? I know S mode and what it offers but I can't fully customize it to how i want without removing S mode and I'm not sure if that's a good idea especially if this a low-end computer.”

Neither Norton nor any other antivirus/firewall offer the same protection as S Mode. S Mode prevents installing non-certified software. Once out of S Mode, you could install software that is not certified and poses a threat that antivirus software will not compensate for. That being said, software by known, major companies is usually safe, if "usually" is sufficient for you.
