“Can I choose to toggle traditional oven and convection oven modes or does it always heat convection mode only? Worried about overcooking,etc.”

there isn't a toggle, as far as i could see, but you can adjust for the difference. when it says convection, it just lowers the overall temp. eg, you set it to 350, it heats to 300. so you can get around it in the settings completely by permanently adjusting for the variance, or just remember to add 50 degrees to whatever recipe you're using.
