“When the griddle is removed, can the burner be used like a regular burner?”

The center, oval burner is for use with a griddle or oval pots. ^Daphane

Yes...when you remove the middle griddle there is still a cooking grate underneath there that will allow you to cook there. The burner is long and oval...not a regular round one though.
