“Some “slide-in ranges” have unfinished sides and rims that hang over counters, while others have finished sides that are fine to have visible (they’re just plain black) and no lip. Which kind is this? Would it be fine with one side exposed?”

Sides aren't terrible. You could get away with having one exposed. Just be aware, it is not one solid panel like a freestanding model.
