Because open burners don't have an airtight seal around the burner, they have more oxygen in their flames, which means you get higher temperature outputs. This direct access to the flames also grants you better control over your cooking: you can easily change from a low temperature to a high one (or vice versa) in seconds. Sealed burners are a newer development in the world of gas stove tops, and they have an airtight seal surrounding the gas outlets, preventing food and liquid from falling into the ports. You work with less direct flame, meaning that sealed burners tend to be safe to use than their open counterparts.
