“Already purchased and set up, choosing PIN for security lock. Is there a way to de-activate this? Would like NONE, but it no longer appears as an option. Also, is there a way to get the VOICEMAIL ICON app to show?”

You can search for apps, or just wait until you get a voicemail. Have you tried going through settings/security/pin?
