“It looks like the function keys are not labeled with F1-F12, do they still retain this function? Can the default be changed between F1-F12 and vol/etc.?”

Hello Marcus! The top row of keys are the designated Apple shortcut keys, the icon on the key describes what it will do. For example, the button in the upper left hand corner will replace your Home button or swipe depending on your device. Here is a link to the setup guide https://www.logitech.com/assets/52890/2/keys-to-go-setup-guide.pdf . On page 6 you'll have a break down of what the keys do and which ones are function keys. Unfortunately, there isn't a way to change what these keys do.
