Cortana is bundled within the search features of the windows 10 and can't be removed. Cortana doesn't differentiate between searching your computer and searching the internet. Cortana acts as a search guide/engine but in the process of doing its job gathers typing & search habits to better "help the user find" stuff. To do this it gathers information. Say you had something like a file labled atm code stored on your computer, and you (not that anybody would nowadays) decide to look it up using cortana. She would look it up on the internet and its search would be stored by the recieving search engine and cortana. So now somewhere a search for that file name goes out on the internet... Cortana causes annoying popups. Even if "supressed" the popups continue. These popups are part tutorial/sales. Now the difference between windows 10 pro & windows 10 home: Windows 10 pro has a program called Gpedit (group policy edit)that allows Cortana to be disabled/ prevented from starting on startup. It is supposed to restore the in computer search feature that would easier to access via the start menu. It seems to function like the bar that is part of cortana without the cortana baggage. Windows 10 home is supposed to shut off Cortana but even with it "off" the program runs silently in the background doing who knows what. Trying to shut the residual program down from task manager fails as it insta-restarts. (like most viruses) It's kinda ironic Microsoft naming this feature after an AI in the game software HALO that goes rogue and tries to destroy the human race. As I touched on briefly there are other features between windows 10 home & windows 10 pro. I listed what key differences there are to me. The other answers will better describe the other features better.
