Yes. You go into your account management and add the gift card to your account and it will add the value and pay your monthly fees from the existing value left on the card.

Yes you can and it will add it to your balance. It will not charge your card until your balance from your Gift card runs out.

Absolutely! Just log into Netflix, go to "Account" from the top right dropdown menu from your profile icon, then just under your payment method there should be a link for "Redeem gift card or promo code". Your credit will show up just above where it says "your account is paid until..." so you can keep track of how much balance is remaining.
