“Is it possible to book this router up to the internet via an Ethernet cable somehow? Like an adapter from Ethernet to coaxial to then provide WiFi connectivity from this device? Ie after I cancel my cable subscription”

Is your internet provider the same company as your cable provider? If it is then you will probably use the coaxial cable that provided television to connect to the internet. That is the way Cox works for me.
