“How frequently do you need to change out/drain the water? i.e. you only use it on weekends so would you need to drain the remaining water on Sunday for use when you want to make more ice the following Friday? Or is it safe to the leave water?”

Water should never sit more than 24 hours if not in use. Recommend refilling and cleaning at least 24 hours before use.
