“If we do continuous record with 4 cameras, how many days/hours will it record at a time? Will it automatically start deleting older days and record over them, or do we have to log in every so many days and download/delete?”

It depends on the camera's surrounding environment. The system can be set to automatically overwrite or to stop recording when the hard drive is full.
