I just pour in the amount of water for the cup size I'm using. Then, even if I have the setting on full carafe, it will only use the amount of water I put in there.
Yes. You can choose a regular cup size or travel mug size. I have used both settings and it fills the cup or mug depending on which one you choose. It's great
The manual that the ninja comes with lets you know the ounces that it will make. But if you want more than what the single cup makes then I would suggest making half a carafe.
You really have *2* single serve sizes-- the listed one, and the 'travel mug' size. I believe the single serve is 16 oz & the travel is 24, but I'm not 100% sure. Worst case, there's a drip on/off switch you can hit when your cup is almost full and it stops pouring immediately.

No size selection for single cups, or even carafe etc., all sizes a preset by the factory and unchangeable. I make a travel cup, or a full pot, and fill my cup from there. I love the machine and the brew it provides. Very happy....
