“It's only toasting one side of the bread or bagel. I have it on Toast and the rack is in lvl 3 as instructed. One side toasts & the other doesn't. Anyone else have or had this happen? If so, was there something you could do or did to rectify it? Or?”

My 3 in 1 ninja foodi ninja does the exact same... as a toaster it should do both sides together.
