“Do these have only black back plates that replace the original ones, or do they also include a set of white ones? I have one black and one white controller, and I don't want the white one to lose its sleekness by having a black plate :P”

My unit only came with the black plates.

I did not speak with a salesperson or check product reviews prior to purchasing. They are black and I did not check into whether they were available in white. That is a good question I can not answer. My kids have both black and white controllers.
