Setting each one up separately (8 max zones, each) so that they each have their own "name" in the app looks quite doable. "Alexa, run zone 5 on ____ for 5 minutes" will work every time.

Yes, I have 2 units. Both installed under the same App. You’ll just have to have two separate watering sequences set and ensure you don’t over lap times.
