“Can you use the two 15° wedges as more of an extension to your door way so place both 15 on top of each other in the opposite way to give the door bell a little more area away from the wall I have a thick brick on one side and too thin of wood to mount.”

Yes. Kit should have three wedges in it, so if you put the first two wedges opposite each other and the third one where the shallow side Is opposite or away from the brick wall that would be better for you.
