“I want to wire from scratch as I'm in an old house and the wiring to the doorbell is not carrying enough voltage. My plan is to simply add new wiring to a new transformer. What is the voltage/type of transformer required of a Ring doorbell? Thanks”

Hello Tommy, Great question. The Ring Video Doorbell can only be connected to an AC transformer. DC is not supported. The Ring Doorbell can directly to a low voltage 8-24V AC transformer.
