“I am looking to mount my TV in an alcove, what is the minimum amount of space "wiggle room" I need in order to hang the TV? ie: If my space is 31" in height, can I hang a TV that is 30" in height or will I need more space to actually hang?”

You need about an inch to hang it. But you should have more space than that for ventilation for the TV.
