• I had mine hooked up to my Marantz receiver using hdmi arc from tv to the receiver and it worked fine. One remote and no problems.

• As long as the receiver has HDMI inputs yes you can.

• No. The Roku Ultra hasn't had an audio optical output since 2016. You would have to connect only the tv to your receiver and use that as the audio source.
