Excellent question, Monsters! The term "convection" simply means the unit uses fans to help circulate the heat, creating a more even temperature throughout the compartment. Because this model is a microwave it uses a magnetron to heat, instead of a heating element like ovens use. The magnetron uses magnetic energy to heat, and therefore can be dangerous around metal objects. For this reason, metal cannot be used with this model.
