“Have a 2013 IMAC 27 with a bad logic board and am considering replacing it with a 2020 MAC Mini ($799) to pair with this monitor for photo editing and general use. Will the MACMini support the higher 4K resolution? What about color accuracy? Thanks!”

Yes! I have the base M1 Mac mini and this monitor supports 4K and HDR through it. I did have to tweak the color on the Mac mini but it didn’t take more than 5 minutes for the whole process.
