“What is the black 'box' at the back of the cook top? I am concerned about wall clearance it would seem the depth is larger than 21 inches.”

That is your wifi. You can remove it, but then it will not connect to your home network. If you remove it, you must put in the supplied cover to protect the opening, which will still require some additional clearance of approximately the same size.
