“Is there good burner control in between full flame and tiny simmer? Out of many reviews, I noticed a handful where people complained that the burners either turn on full high or very low, and there is no incremental range in-between. Is this true? I'm replacing an old stove but my current stove offers every stage between full power to tiny simmer.”

Absolutly, and because of the way the knobs work the flame won't go out when you are simmering. Further the burners are designed with different maximum/ minimum heat outputs so if used properly it's easier not to over heat simmering dishes.

Each burner has a maximum BTU rating and a corresponding range of flame heights for cooking different types of items and pot sizes.
